Cheese Corn Spinach Panini / Grill Sandwich






While posting I am drooling, its must try....Period!!!

The whole combo is Divine, the perfectly golden brown crisp outer layer & inside is smooth, rich, creamy filling of cheese, corn, spinach ............yummm!!!

Ohh ya and best part, it hardly takes anytime to put together. The filling is so versatile that it can be used in many ways as sandwich filling, on toast, pizza, pasta, bake it as is, puff pastry, pinwheel there are numerous options to explore & invent with it.....get creative & share your take on this. 

Ingredients (Makes 4 Sandwiches)

6 cups of baby spinach leaves
1 cup corn 
2 medium or 1 big garlic clove
1/2 cup cheese (I used sharp Cheddar)
1 tbsp cream cheese 
little less than 1/4 cup milk
1/2 tsp red chilly flex
1/2 tsp freshly crushed black pepper
salt to taste 
1 tbsp extra virgin olive oil or butter
4 Sandwich bread


Add EVOO or butter to pan add garlic, saute it for 30 sec. Add corn,spinach & salt . let it cook for 3 min or till spinach gets tender.  



Add cream cheese, cheese, milk & red chilly flex. Let it cook for 2 min or until everything is melted & mixed together evenly. 



add a layer between sandwich bread & grill it using panini press. 



Serve hot with your choice if salad or soup :)
