Strawberry Flavor Rasmalai


How about strawberry flavor ras malai for your valentine, Can it get any cuter & tastier than this? Absolutely love the way it came out……just perfect!
This all started when I posted my rasgulla recipe last 10 days back on one of the food group i follow & member ask me if rasgullas can be made colored? As I have never tried it before I borrowed some time to experiment & outcome is this beautiful fusion.
Thank you dear for asking me this question it made me go out of the box & create something new….

For Chhena
4 cups milk
1 lemon juice
2 drops of Walton pink food gel color
For syrup
2 ½ cups water
1 cup sugar

For Ras i.e. Milk
2 cups milk
¼ cup condense milk
2 tbsp strawberry syrup
2 tbsp mawa powder (optional)
Chopped almonds or pistachio to garnish

Keep milk for boiling once it starts boiling add food color mix it well & add lemon juice to it, stir it well. Switch off gas as soon as milk starts curdling. The milk solid is a paneer. This is very important that not to over cook milk once it curdles up otherwise rasgulls will turn chewy.

Strain whey from paneer & wash it under running cold water tab in strainer. Take a cheese cloth, place paneer in it & squeeze excess water out. Take out the paneer in fresh plate, use kitchen paper towel to remove any excess water/moisture from paneer.

Knead the paneer for 8-10 minutes to make soft dough. Once soft dough is ready make crack free small 16 equal small round balls.

Mix 2 ½ cup of water & one cup of sugar in pressure cooker, bring it to boil. Once it comes to boil carefully add small paneer balls to syrup. After adding all balls to syrup cover cooker & let it cook on low medium flame for 10-12 minutes.

After gas switched off let cooker release its steam on its own do not try to release it, it might break the rasgulls.

To make ras (milk) keep milk for boiling once come to boil add mawa powder & condense milk mix well & let it come to boil again. In the end add strawberry syrup & take off the flame. Let it cool off. 

Now squeeze the chachani out of rasgulla & add it in the milk. Garnish it with choice of nuts.

Refrigerate it for 5 hours before serving …..that’s simply scrumptious & fresh for your valentine smile emoticon
