NO GRIND TRADITIONAL FERMENTAED IDLY!

On a cold winter day what could be more satisfying than piping hot idly sambar with chutney, absolute comfort family food for us.

I love idly, but soaking dal & rice, grinding it use to make it lazy affair but ab bina khaye bhi toh kam nahi chalta hian na.toh.short cut dhundo! And my way of making it is taking 2 cups of fine idly Rava with 1 cup of udad dal flour. Just mix it with warm water & let it ferment.... as easy as 1, 2…3. Depending upon weather your fermented batter will be ready between 24 - 30 hrs.

Gudh til papdi / chikki




Dil toh pagal hain
dil diwana hain
lo karlo bat, ab toh dil til papdi bhi hain.....
Cheesy ...rite? but had to write this one

After dil-wali idly....Dil toh pagal hain series is still on with me

1 cup roasted til
1 cup gur / gudh
1/2 tbsp ghee
in pan on low heat add ghee once ghee is melted add gur and let it melt too. Once gur is malted cook it on low flame for 1 min. Add roasted til mix it well for a minute, turn off flame. Pour the mixture on parchment paper, keep one more paper on top and roll it with rolling pin as thin possible. While its still hot put the desire cuts and let it cool off………taaa dhaa u r done!

PS - try and use brown color gur for it. white color gur is salty & generally turns out to be soft. for real crisp one you can use same proportion with sugar. I used cookie cutter for shape.




Sugar Til Papdi / Chikki



Those who still want to try out I have made a sugar til papdi using same process & its crisp just the way we all love it.
1 cup roasted til
1 cup sugar
1/2 tbsp ghee

in pan on low heat add ghee once ghee is melted add sugar and let it melt too. Once sugar is malted add roasted til mix it well, turn off flame (make sure not to over cook ). Pour the mixture on parchment paper, keep one more paper on top and roll it with rolling pin as thin possible / desire. While its still hot put the desire cuts and let it cool off………taaa dhaa u r done!

Note:
- Sugar cools off very fast so make sure to work fast.
- Making fancy shapes with this one could be tricky .
- Parchment paper can be replaced by greased cooking top & rolling pin
- I used cookie cutter for shape.

P.S - I had just 2 tbsp of til left so cld make only 2 little hearts.

Rasgulla





Rasgulla……heart melting desert for me. I have always been found of this desert but literally fell in love when my bong roomy introduced me to authentic Calcutta resgullas. I still remember the way it melted in mouth…….yuuummmm

It took time to reach till here but yes finally nailed it and here I am with fullproof recipe…..try it I am sure nothing can go wrong with it

For Chhena
4 cups milk
1 lemon juice
1 cup sugar

For syrup
2 ½ cups water

Keep milk for boiling once it starts boiling add lemon juice to it, stir it well. Switch off gas as soon as milk starts curdling. The milk solid is a paneer. This is very important that not to over cook milk once it curdles up otherwise rasgulls will turn chewy.

Strain whey from paneer & wash it under running water tab in strainer. Take a cheese cloth, place paneer in it & squeeze excess water out. Take out the paneer in fresh plate, use kitchen paper towel to remove any excess water/moisture from paneer.

Knead the paneer for 8-10 minutes to make soft dough. Once soft dough is ready make crack free small 12-15 equal small round balls.

Mix 2 ½ cup of water & one cup of sugar in pressure cooker, bring it to boil. Once it comes to boil carefully add small paneer balls to syrup. After adding all balls to syrup cover cooker & let it cook on low medium flame for 10-12 minutes.

After gas switched off let cooker release its steam on its own do not try to release it, it might break the rasgulls.

Let it cool off & refrigerate for 5 hours before serving …..that’s simply scrumptious & fresh

While cooking we always make sure to add secrete magical ingredient “ LOVE” to every dish….it becomes special treat for family if we sprinkle bit of magic on dinning table too, makes it a treat for eyes n tummy too

3 red wine glasses
3 red roses - from dollar store velvet rose bunch for 1$
3 tea light candles
few heart crystal to spared on table - from dollar store


that's all .....you just created magic in there.......now seat back n make those beautiful memories to cherish!





Guacamole



While doing veggie shopping today, I saw these beautiful avocados & brought it home with me. Though the evening dinner was planned as dosas but instead of regular chutney thought of making guacamole with it (not known combination but went well with our taste buds).

Ab jab avocado pe dil aa hi gaya tha toh present bhi toh dilsehi karna padegana!

Presenting Avocado Heart….

1 ripe avocado
½ lemon juice
½ onion finely chopped (if onion is big size reduce quantity to ¼)
½ tomato finely chopped (I prefer to take off seeds)
Salt to taste
1 tsp cumin power
½ cup of cilantro finely chopped
1 green chill (optional)
Red bell paper / tomato for garnishing (optional)

Cut avocado in half very carefully & take off seed. Using spoon take off the inner part and save the skin for serving. Smash avocado with fork (do not make it very fine paste). Mix all ingredients except garnishing one. Adjust seasoning as per taste. Place avocado skin in a dish to shape like a heart, fill it with guacamole. Garnish it the way you like, I simply love hearts so cut it out of red bell paper ………….taa dhaaaa….your guacamole is ready to serve.


This can make a perfect valentine day party starter with some nachos along,
